Answer: These blondies!!!
My girlfriend's daughter, Cameron, had asked me to make her some cookies last week. She loves my chocolate chip cookies that I had baked for her last time because every kid loves something gooey and delicious. But I had something else in mind to bake up for her since I knew she was a big fan of Reese's peanut butter cups. I found my recipe for Peanut Butter Blondies and brought everything over to my girlfriend's house to bake them up. Of course, Cameron helped me out, and mixed and sampled all the sweet goods. We had to improvise on the butter/oil since there was none in my girlfriend's pantry, and substituted applesauce. It just made for a lower calorie blondie, but still gooey and delicious.
Trader Joe's has these wonderful little tubs of mini reese's peanut butter cups, little knubs of heaven. If you left this open with little children around, the container would be empty within seconds! Enjoy the peanut butter blondies for yourself, and you'll be hungry for more.
Peanut Butter Blondies
Adapted from Baking Blonde
Ingredients:
1/2 cup applesauce
1/2 cup peanut butter (I used Creamy)
1 cup brown sugar
1 egg
1 tsp. vanilla extract
1/4 tsp. salt
1 cup flour
1/2 tsp. baking powder
1/2 cup mini Reeses Peanut Butter chocolate cups from Trader Joe's
Preparation:
1. Preheat oven to 350 degrees.Line an 8×8 pan with foil and lightly spray with PAM.
2. In a medium bowl, stir the peanut butter with the applesauce until creamy and smooth. Add the brown sugar to the peanut butter and stir until smooth. Add the egg and vanilla and stir to combine. Add the flour, baking powder adn salt to the peanut butter mixtuer and stir just to combine. Gently fold in Reese's cups and any other additions (chopped nuts, chopped Reese’s cups, Reese’s pieces, etc).
3. Pour into prepared pan and use a greased spatula to evenly spread mixture in pan and level the top. Bake for 20-30 minutes or until set in the middle. (I baked for 30 minutes)
4. Cool on rack before cutting.
Review: Take a look at the gooey melted Reeses cup, and you drool for it. If you're ever in a peanut butter mood, you'll love these blondies! Next time I'll make her some of these S'more bars.
