Easter Menus

Happy Good Friday and Easter weekend everyone!

I’m busy prepping a wonderful Good Friday dinner SoCal style – Fish tacos. Easter is very special occasion in our family, and I absolutely love holiday gatherings whether it be big or small because it always brings the family and delicious food to the table. Whether you are hunting for Easter eggs or cozying up on the sofa – remember to enjoy the quality time spent with your friends and family and celebrate your health and happiness.

If you are looking for ideas on what to serve – here are some my recommendations for a wonderful meal.

Easter Brunch/Dinner Menu Suggestions:

Going the non-traditional route for the typical ham seen on Easter, this pork tenderloin is just as juicy and delicious.

Herb-Crusted Pork Tenderloin served with mashed potatoes and roasted asparagus.

My favorite salad dressing, it’s fresh and light.

Strawberry-Poppyseed Vinaigrette over a bed of spinach/mixed greens topped with freshly sliced strawberries, crumbled goat cheese, slivered red onions, and pumpkin seeds.

Something you can make the prepare the night before and pop it into the oven when ready to eat, it can be sweet or savory like:

French toast bread pudding or Savory Breakfast bread pudding.

 

Carrots are good for you especially in desserts like:

Carrot-Cake cookies or Carrot Cake with Marshmallow Fluff Cream cheese frosting.

 

Drink up some Strawberry Lemonade to wash everything down, too!
