Prosciutto & Mozzarella Sandwiches

It seems that I have a slew of Italian recipes brewing up in my kitchen lately and this is one we can’t get enough of. This sandwich is so ridiculously easy, and it’s one of our favorite sandwiches that we discovered in Firenze. We love everything about it – the melted mozzarella cheese - it oozes with each bite, the peppery arugula – it pairs well with classic Italian flavors and the hard to resist prosciutto – the ultimate meat candy. How can you say no to a line-up like that?

I think the main takeaway that I learned while vacationing in Italy – was the simplicity of the food. Using a couple fresh ingredients in a sandwich and making it irresistible, that’s the Italian way. I really love that this sandwich is easy to prepare within a couple of minutes, and so quick to enjoy, too. I love using sun-dried tomato pesto right now, and I bought already-made pesto at the farmers’ market. You could easily substitute basil pesto but I love the richness that sun-dried tomato pesto brings to the sandwich.

Prosciutto & Mozzarella Sandwiches
Inspired from Bonde in Firenze

Ingredients:
1 loaf of focaccia bread
couple slices of prosciutto
½ cup sliced fresh mozzarella
Sun-dried tomato pesto or pesto
sliced roma tomatoes
handful of arugula
Kosher salt & freshly ground black pepper
Extra-virgin olive oil


Preparation:


Preheat the broiler on high for a couple of minutes. Make sure the top rack is on the second to the top rack.


Slice the focaccia bread in half, and spread the mozzarella slices on one side. Place the focaccia bread on baking sheet.


Place under the broiler until melted, make sure to keep the oven door slightly open, or else it will burn.


Remove the focaccia bread from the oven, add a couple slices of prosciutto, a couple slices of tomato, a handful of arugula, and on the other slice of bread - add your desired pesto. Season with salt and pepper.


Serve and enjoy immediately.

Review: It’s a perfect Italian lunch, it’s not the equivalent of our favorite sandwich from Bonde, but a fair comparison. I’m also hooked on San Pellegrino aranciata, it’s sparkling orange water. It’s so refreshing to pair with this ultimate Italian sandwich.
