I'm going to start campaigning for an official Chocolate Peanut Butter cup cookie day because these cookies are YUMMY-LICIOUS!! Peanut butter is one of my childhood favorite foods, and chocolate is up in the ranks as well. I absolutely love the traditional use of peanut butter in PB&J sandwiches, or the ever-so popular peanut butter criss-cross cookies, or in the use in savory Filipino dishes like Kare Kare or a Thai satay sauce. I love peanut butter in any element but I think in the form of a cookie is my most favorite. The mini chocolate peanut butter cups truly make this cookie highly enjoyable but you could use regular chocolate chips if you can't locate these. These cookies are easy to prepare whenever you are feeling a little nostalgic for those childhood days. Enjoy!
Chocolate Peanut Butter Cup Cookies
Adapted from Cathy's Kitchen Journey
Ingredients:
½ cup butter, room temperature
½ cup chunky or smooth peanut butter
½ cup granulated sugar
½ brown sugar
1 egg
1 ¼ cup all-purpose flour
½ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup Mini Chocolate Peanut butter cups (or chocolate chips)
Preparation:
Preheat oven to 375 degrees. Line your cookie sheets with silpat or parchment paper.
Cream the butter and the sugars until smooth and light. Add the egg and mix until combined.
In a medium bowl, whisk the flour, baking soda, baking powder and salt together. Slowly incorporate the dry ingredients to the butter mixture. Stir in the mini chocolate peanut butter cups.
With an medium-sized cookie scooper, round ¼ cups of cookie dough onto the cookie sheet. Bake for 10 to 12 minutes until lightly golden.
Yield: 24 medium-sized cookies
Review: These are amazing cookies and perfect for any chocolate and peanut-butter-lover. I loved how rich and creamy the cookie dough mixture is by itself. Yup, I couldn't help myself to enjoy a couple spoonfuls of cookie dough, you can bake the cookie dough if you want cookies, too. Anytime you get the flavor combos of peanut butter and chocolate...you'll be muttering nomnomnom and asking for a large glass of milk!
Plus, I love these mini milk chocolate peanut butter cups. They are perfect to eat all by themselves! hehe
