Luckily, I was inspired from my internet girlfriends of April brides to make this fabulous treat. Who doesn't love anything with chocolate and cream cheese? ME! It's like having a no-bake oreo mint cheesecake, and I loved that I was able to incorporate a little holiday spirit into these as well using some crushed up candy canes as decor. The mixture of mint oreos and cream cheese came together in my handy dandy food processor and if you don't have one - just make them the traditional way. Beat the cookies down into a fine grind (you'll love the work out) and combine it together with the cream cheese. The mint oreos are only available during the holiday season so grab some when you can. Oreo fanatics and chocoholics will love you for these beautiful treats!
Oreo Mint Truffles

Ingredients:
1 package of Oreos of your choice, I used the mint
1 8-ounce bar of cream cheese, room temperature
8 ounces of semi-sweet chocolate
Crushed peppermints for decorating
Preparation
Using a food processor grind the cookies until finely coarse. (Or smash the cookies in a ziplock bag). Add the cream cheese and mix to combine.
Place the cookie mixture in a medium bowl and let it refrigerate for at least an hour or preferably overnight.
Using a small cookie scooper about 1 tablespoon place on a cookie sheet. Repeat until everything has been used. Place the cookie sheet in the refrigerator and let it set for at least 20 minutes.
Meanwhile, melt the chocolate using a double-boiler method or in the microwave. Dip the oreo balls into the melted chocolate and place on another cookie sheet lined with wax paper. Repeat until all oreo balls are covered. Garnish with crushed peppermints and place in freezer or refrigerator until chocolate is set.

Review: These treats are terribly easy to prepare and will blow anyone away. This reminds me of Thin Mints Girl scout cookies but in little bite size portions. No-bake cookies are always welcome in my kitchen because it gave me extra time to enjoy the other little stuff and more time to eat a cookie or two. This a perfect chocolate pick-me up on those days when you are short on time.
