Happy Anniversary

Wow. I can’t believe it’s been three years since Eric and I tied the knot. We certainly have faced our share of challenges this past year but there is nothing that we can’t handle together as Mr. and Mrs. It’s a sweet reminder of why we are married and how we work as a couple. We are each other’s rock, pick each other up when one is down, and celebrate the best of times no matter what. Our love is unconditional, and I look forward to many married years to come.

To celebrate our blissful anniversary, we are staying home for a tasty Bobby Flay themed-meal prepared by myself. We are saving funds for our big vacation in Italy next month, so it wasn’t a big deal to go out for dinner. I have been inspired to prepare a Mesa Grill meal at home because it was one of our favorite restaurants that we have dined at. This past week, I have been busy with prep work for garnishes, sauces, and dessert, too. The food posts will be featured sometime this week, too.

2011 also marks a decade that Eric and I have been together. In ten years, we have gone through many changes, faced challenges and compromised on issues together as best friends should. We have survived college together, we both got careers (I even got laid off by one job), we have traveled together, we got married, we bought a house, did crazy things like go skydiving, we have renovated our house, and now we are planning on the next stage of married life, too. After 10 years of being together, we are stronger than ever, more in love, and enjoying every minute of our married life.
