Apple Cinnamon Oatmeal Cookies

I hate how weekends fly by soooo fast, but sometimes a batch of homemade cookies makes the pain go away. Honestly, this past weekend was simply fantastic. We hung out with our wonderful best friends on Friday night, had a tasty dinner out at a fish house, and watched the Green Hornet. (Seth Rogan is hilarious!) We managed to hang out with my family on Saturday, and on Sunday Eric and I super-detailed the kitchen. (Busy weekend!) The cabinets, the countertops and appliances were scrubbed from top to bottom and I was crazy enough to pull everything out of the island drawers and organize all gadgets and clear out the clutter. I always feel so accomplished after cleaning our kitchen and house, and I was definitely riding in high spirits after a fun-filled weekend.

Originally, I had wanted to bake these cookies before we visited the family on Saturday to bring something over but the last minute dinner plans on Friday changed my baking plans. Since I already had my ingredients ready to go, I decided to bake the batch for Eric and I on Sunday night. I was a little uncertain to bake oatmeal cookies without raisins but decided to trust Joy’s judgment and roll with it. Oh my freaking gravy…these cookies were simply perfect. I’m still drooling about them. The addition of the fresh diced green apples made the cookies so luscious and soft, and gave a tart sweetness to the oatmeal cookies. It was the perfect way to end a busy weekend and say hello to another busy work week.

Apple Cinnamon Oatmeal Cookies

Ingredients:
½ cup unsalted butter, room temperature
½ cup sugar
½ cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1 ½ cup rolled oats, old-fashioned
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
¼ teaspoon or less of freshly grated nutmeg or ground nutmeg
¾ walnuts, toasted and coarsely chopped
1 medium apple, peeled and diced small (granny smith)
1 teaspoon lemon juice


Preparation:


Preheat the oven to 350 degrees. Line two baking sheets with silpat or parchment paper.


Peel and dice the apple and toss with lemon juice and place in a small bowl. Set aside.


In the bowl of the stand mixer on medium speed, cream the butter and sugar together until light and fluffy. Add the egg and vanilla extract and mix until fully combined.


In a large bowl, whisk together the oats, flour, baking soda, baking powder, spices, and salt. Add the creamed butter mixture and mix on low speed until fully combined. Stir in the walnuts and apple bits.


Scoop about ¼ cup (using a small cookie scooper) of the cookie dough mixture. Or use a regular ice cream scoop (about 1/2 cup). Place 12 cookies on the cookie sheets.

Bake for 10 to 12 minutes, or until lightly golden. Allow to cool on cookie sheets for about 5 minutes before transferring over to cooling racks to cool completely.

Review: Nom-tastic and simply amazing!!! I relished and enjoyed each bite of this cookie because they were so delicious. I made small and large cookies, so if you want to be good (eat 2 small ones) or work extra hard to eat the large one. Seriously these were the best cookies that we have had in a long time, and exceeded the batch of cranberry oatmeal cookies that I made last week. I highly recommend this recipe if you are looking for something sweet in a cookie.
