Pot of Gold: Jessica's Virtual Baby Shower

It's time for a virtual party! A virtual party is when a group of blogger friends choose a day to write a post to celebrate such a blessing in their life. It's one way to shower their friend with love and it is a special way to share the dishes that we might be enjoying if we were all together in real life. The hardest part of the virtual party is that most of us all live far away from each other but that doesn't stop us from showering our friends with love.
Today Jessica of My Baking Heart and I are co-hosting a baby shower for Jessica of Sunny Side Up. She is expecting her first baby anytime now - a sweet baby girl! As you may know if you don't already, Jessica and Jesse have named their sweet daughter, Maeve. It comes from Irish descent and Jessica absolutely loves Irish dancing. Jessica and I wanted to do a little Irish jig (if we could) to celebrate and help welcome her little bundle of joy Irish style, so we came up with the perfect theme - Pot of Gold!

Jessica is a dear friend to me who I had met a couple years ago on a cooking board and we actually met in real life at a food blogger conference and also have had a couple meet-ups afterwards as well. We have been friends ever since and I have been slowly waiting for the day for her to become a mommy. Jessica is pretty awesome with kids (she was a part-time nanny), cooks and bakes yummy and delicious foods like this incredible Tuxedo Layered Cheesecake or one of favorite meals Spicy, Sticky, Sweet Asian Meatballs and is a very thoughtful and caring friend and her down to earth charm is infectious. She is one of my all-time favorite bloggers that continues to inspire me and a true sweetheart of a friend. I know that Jessica is going to be one fantastic mommy and will shower her little pot of gold with so much love.

To celebrate Jessica's Pot of Gold baby shower, Jessica and I have gathered a fabulous group of Jessica's favorite bloggers for a virtual shower. Everyone has prepared plenty of delicious treats and mouthwatering eats for this wonderful Pot of Gold virtual baby shower.

First up, Katie of So Tasty, So Yummy baked a Chocolate Guinness Cake. Chocolate and beer in a cake? This scrumptious sweet treat is a must for any Irish celebration if you ask me. Pure genius (Guinness).
A fellow friend of ours, Joelen of What's Cooking Chicago made a tasty Shepard's Pie. This is a staple in Irish cooking and definitely a meat pie that we would all enjoy. Highly satisfying!
Next up, Amber of Sugared Whisk made these fantastic Irish Egg Rolls. These tasty and filling appetizers are a perfect alternative to the typical corned beef and cabbage. Heck yes!
Krissy of Dainty Chef baked up these gorgeous Rainbow Cupcakes. These colorful rainbow cupcakes are perfect for this Irish celebration because they are fun to make and eat as well. It's like eating all the colors of the rainbow!
Rachel of Good Thymes and Good Food baked up one of my favorite dishes that I love to indulge on of Irish Soda Bread. This Irish classic is best when served warm with good butter, especially Irish butter if you can find it.
Kelsey of Apple a Day baked up a batch of some savory Irish Cheddar Scones. These scones are the perfect Irish indulgence - cheesy and buttery carb-y heaven. Yes please!
Elly of Elly Says Opa made a tray of Steak and Guinness Sandwiches. This fancypants steak sandwich is a beautiful marriage of beef and Guinness. Can I have a tray of these right now?
Nikki of Seeded at the Table made this gorgeous End of the Rainbow Fruit Salad. This End of the Rainbow Fruit Salad is the first book in a series of kids cooking-related books from the Kitchen Club kids. Kid-friendly recipes are a must for any future baby foodie! Smart thinking mommy Nikki!
Another mutual friend of ours, Nicole of Prevention RD, made these irresistible Guinness and Pretzel Truffles. I have to get my hands on some Guinness and try these suckers out because they sound ahhh-mazing!

Jessica my fellow co-host of My Baking Heart made Chocolate Mint M&M Cookies. Jessica must have been on the same cooking mindset as myself because I used Mint M&Ms in my recipe as well. Any M&M cookie is a winner but this Chocolate Mint version will have you addicted!
Finally, for my own contribution, something that every pregnant woman wants/needs/must-haves are the perfect icy cold sweet treat - Shamrock Ice Cream. You always need to wear green for St. Patrick's Day to avoid getting pinched and I wanted to make something that was green enough to eat! I was inspired from Suzanne to make a batch of Shamrock Ice Cream. It's funny but I have been on an ice cream making kick lately, and I'm not even pregnant! My adaptation has mint Oreos and mint M&Ms making it the ultimate minty green concoction.

Shamrock Ice Cream
Adapted from The Perfect Scoop & Inspired from Kokocooks

Yield: 1 pint
Ingredients
  • 1 cup whole milk
  • 2 cups heavy cream
  • 1/4 cup sugar
  • pinch of salt
  • 5 large egg yolks
  • 1/4 teaspoon mint extract
  • 1 cup crushed Mint Oreos
  • 1/2 cup Mint M&Ms
  • 1/8 teaspoon green coloring
Cooking Directions
  1. In a small saucepan, warm the milk, heavy cream, sugar and salt over medium heat. Bring to a slow simmer for about 10 minutes.
  2. In a medium bowl, whisk together the egg yolks. Slowly scoop 1 cup of the warmed milk liquid into the medium bowl and whisk constantly until the egg mixture has thickened slightly. Be careful to curdle the eggs with the hot milk, remove any cooked eggs if so.
  3. Stir the whisked egg mixture back into the pot and stir the mixture together with a heatproof spatula over medium heat. It will coat the spatula. Remove from heat and chill mixture thoroughly in the refrigerator.
  4. Prepare ice cream in your ice cream maker according to the manufacturer's instructions. Stir in the green coloring until the mixture is the desired shade of green. Fold in the crushed Oreos and mint M&Ms. Place in a freezer container and let it freeze for at least 4 hours before serving.

Kahlua Cappuccino-Fudge Cheesecake

No matter how you look at it birthdays are wonderful milestones in your life.
It's funny when I was younger like in my kiddo days, I absolutely loved birthdays. The silly excuse to eat cake, have an awesome party all in your honor and the insane amount of presents from your friends and family. Nowadays, my view on birthdays are "UGH, I'm getting old!" or "OMG, it's here again - another year has past?" Birthdays shouldn't be painful reminders of how old you are, but they should make you appreciate the simple and positive things that happened in the past year. The birth of my beautiful daughter, saying goodbye to the working world and becoming a stay at home mommy, and enjoying the love of my family and friends. Birthdays are your very own personal holiday, and that never gets old.

One of my favorite birthday celebrations is baking up my birthday cake. Some may think that this is silly that I bake up my own birthday cake, and that maybe I should buy a cake. Or maybe have my husband, bake me a cake - that might happen later down the road. I really love the baking challenge of finding my birthday cake and creating and enjoying it. It's my own private birthday relaxation and celebration all rolled into one special cake.

Triple Berry Buttermilk Cake

Happy Friday and Happy Birthday to my sister, Tahnee!

I have been enjoying my time as a "stay at home mom." Sometimes it has it's perks. I sometimes sleep in (when Elena lets me), lounge in my pajamas most of the day (while cleaning the house/feeding/entertaining Elena), and on my downtime mindlessly watch Netflix marathons of "How I Met Your Mother." I'm trying to enjoy it all now before we have to baby proof the house because Elena has been flipping over like crazy these past couple of days. We are afraid that she will be crawling in a couple of weeks and I'll be chasing her everywhere around on our tile floors.

We will be celebrating my sister's birthday this weekend. I wanted to bake up something sweet for her and the upcoming Dessert Swap came at perfect timing. This dessert was easy to prepare and the original recipe had raspberries in it. I took Smitten Kitchen's advice and substituted the raspberries for other berries that I had available. Plus, I'm a sucker for the triple berry combination of raspberry, blackberry, and blueberry, too.

Simple comfort food dessert.

Spumoni Ice Cream Layer Sundae Cake

Happy Birthday to me! This birthday came up quick and sneaked up on me, luckily despite the Superbowl planning madness - I still managed to challenge myself to bake up a birthday cake. Last year's Rainbow Birthday cake was a colorful tribute to my little kiddo days, and I honestly didn't know what I wanted in a cake for this year. I had been scouring fellow blogs and searching ideas on pinterest, too. Plus, my pregnancy taste buds are quite different and it's hard to really pinpoint foods that are easy on my palate.

Then I thought about my 16th birthday dinner party at one of my favorite Italian restaurants, Old Spaghetti Factory. We have been dining at this restaurant for as long as I can remember, and I have always loved that we always ended the meal with their signature spumoni ice cream. Spumoni ice cream is made of pistachio, chocolate and strawberry ice cream all swirled into one and it's always a wonderful treat to indulge on. I did have a birthday cake to go along with my ice cream, but it would have been a thousand times better if the cake and ice cream were combined together. Until now, I wanted the best of both worlds - spumoni ice cream layer sundae cake.
This cake sounds like a mouthful, and it took alot of careful planning to dissect each element that I wanted for the cakes. Plus, I wanted everything from scratch - that's always the foodie challenge I set myself up for. Make sure to set at least 2 to 3 days for preparing all the elements. I made the ice cream the first day, which you can easily skip this step if you choose to use a store-bought version. Bake the cakes the following day, and wait until they are completely cool. Build and cut the cake layers and add the layer of ice cream, and then let it freeze until firm. I highly suggest you wait until the next day to add the layer of frosting and ganache to make sure the layers are firm.

This was definitely one of the most beautiful cakes that I have made and equally an indulgent birthday dessert that I can't help falling in love with.
Spumoni Ice Cream Layer Sundae Cake
Inspired by OSF; Cakes adapted from Sweetapolita; Chocolate Ganache & Whipped Vanilla Buttercream Frosting adapted from Sunny Side up in San Diego; Pistachio Ice Cream adapted from I Was Born to Cook

Ingredients:
Pistachio Ice Cream:
1 cup salted shelled pistachios
3/4 cup sugar
2 cups whole milk
1/2 teaspoon almond extract
4 egg yolks
1 cup heavy cream
3/4 cup salted shelled pistachios, chopped
Preparation:
Finely grind 1 cup pistachios and 1/4 cup sugar in food processor. Bring milk and ground pistachio mixture to boil in large saucepan. Remove from heat. Mix in almond extract.

Whisk egg yolks and remaining 1/2 cup sugar in medium bowl. Gradually whisk in hot milk mixture. Return custard to saucepan. Cook over low heat until custard thickens and leaves path on back of spoon when finger is drawn across, stirring constantly, about 10 minutes (do not boil). Strain into large bowl. Chill for about 2 hours in the refrigerator.

Stir 1 cup heavy cream and chopped pistachios into custard. Process mixture in ice cream maker according to manufacturer's instructions. Place wax paper with the edges hanging over in a round cake pan. Transfer ice cream to cake pan and freeze until firm.
Chocolate cake:
¾ cup plus 2 tablespoon all-purpose flour
6 tablespoon dark cocoa powder
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 cup sugar
¼ cup vegetable or canola oil
1 large egg
½ cup black coffee
½ cup buttermilk
1½  teaspoon vanilla extract

Preparation:
To make the chocolate cake, butter and flour the edges of a 8-inch round pan, shaking out the excess flour. Line the bottom with a round of parchment.

In a small bowl, combine the flour, cocoa powder, baking soda, baking powder and salt. Whisk together and set aside. In the bowl of the stand mixer, combine the sugar, vegetable oil and egg. Beat on medium speed until smooth, about 1-2 minutes.

With the mixer on low speed, blend in half of the dry ingredients, beating just until incorporated. Blend in the coffee, buttermilk and vanilla just until smooth.  Mix in the remaining dry ingredients, blending until incorporated.

Preheat the oven to 350 degrees. Pour the batter into the prepared pan and bake, rotating halfway through, until a toothpick inserted in the center comes out clean, about 35 minutes. Transfer to a wire rack and let cool in the pan for 20 minutes. Run a knife around the edges, then turn the cake out onto the rack and let cool completely.

Strawberry cake:
1¼ cups plus 2 tablespoon all-purpose flour
1¼ teaspoon baking powder
¼  teaspoon salt
1 cup sugar
1½ ounce strawberry Jello Mix
8 tablespoon unsalted butter, at room temperature
2 large eggs
½ cup whole milk
1½ teaspoon vanilla extract
¼ cup strawberry jam
*Pink food gel*optional, if desired a bright pink color

Preparation:
To make the strawberry cake, butter and flour the edges of a 9-inch round pan, shaking out the excess flour. Line the bottom with a round of parchment.

In a small bowl, combine the flour, baking powder and salt. Whisk together and set aside. In the bowl of the stand mixer, cream the sugar, strawberry gelatin and butter until combined. Beat on medium-high speed until light and fluffy, about 2-3 minutes.

Slowly add the eggs into the sugar mixture one at a time, mixing well after each addition. With the mixer on low speed, add half of the dry ingredients to the batter and blend until incorporated. Blend in the milk and vanilla extract. Add in the remaining dry ingredients, mixing just until incorporated.  Add in the strawberry jam and a couple swirls of hot pink food gel and mix to combine.

Preheat the oven to 350 degrees. Pour the batter into the prepared pan and bake, rotating halfway through, until a toothpick inserted in the center comes out clean, about 35 minutes. Transfer to a wire rack and let cool in the pan for 20 minutes. Run a knife around the edges, then turn the cake out onto the rack and let cool completely.

Whipped Vanilla Buttercream

3 sticks unsalted butter, softened
3 cups sifted powdered sugar
3 tablespoons whole milk
1 tablespoon vanilla bean paste (or 1 teaspoon of vanilla extract & scrapings of one vanilla pod)
pinch of salt

In the bowl of a stand mixer, cream the butter for 5 minutes on medium speed, until light and fluffy. Add the powdered sugar, milk, and vanilla bean paste and mix until combined.

Chocolate Ganache
1/2 cup heavy cream
6 ounces semi-sweet chocolate, finely chopped

Place chocolate in a medium heat-proof bowl. Bring heavy cream to a boil. Pour the heavy cream over the chocolate and stir until the chocolate is smooth and melted. Allow the ganache to cool to room temperature before pouring over cake.

To assemble the cakes:
Torte each of the cake layers evenly. Place the chocolate cake layer on the bottom of the the cake board. Remove the ice cream from the pan and place on top of the chocolate cake. Top with the strawberry layer. Place in the freezer until firm, preferably overnight. When ready to decorate the cake, prepare the frosting and chocolate ganache. Frost the top and sides of the cake with the whipped vanilla buttercream.  Pour the chocolate ganache over the cake. Garnish with chopped pistachios, whipped cream and a cherry if desired.
Review: Sinfully delicious and this is one of my proudest cakes that I have ever baked. This cake was oodles of fun because I baked a regular size cake and a mini cake. One for birthday and one to share with the family. Normally, I like cooking savory dishes, but every now and then I get the creative baker mojo in me. I can't wait to share this cake with the family for a birthday celebration this weekend.
