Cantaloupe Agua Fresca

There are many simple pleasures in life that make you go hmmmmmmm.

They are unexpected gifts of life that make you smile and enjoy that moment for as long you want. Things like seeing your baby crawling around the house and on the verge of taking her first steps. We have an ottoman set up in the center of our living room, and I usually have to put my slippers on top of it so Elena won't eat them. She's figured out how to pull herself up and grab my slippers regardless! The little booger loves to munch on shoes anyway she can but I'm super proud mama on her little steps to walking, too.

Sometimes when you receive an unexpected gift in the mail from a dear friend. I recently got a children's book for cupcake because my friend knew it would be perfect for us. It really makes you appreciate the value of your friendship and wished that you lived 10 minutes closer than 100,000 miles away. Thank you again Betsy for the wonderful book, "You are my Cupcake" is the perfect first book for my foodie kiddos.

Or sometimes it's the first sip of a beverage especially when you are really thirsty. You just finished cleaning the house or finished ten loads of laundry. The only thing you want is something ice cold to quench your thirst.  When you are really thirsty, that first sip of any liquid beverage is pure bliss. This cantaloupe aqua fresca translates to "fresh cantaloupe water" in Spanish, is exactly what it - refreshing and the perfect way to quench your thirst.

Cool and refreshing!

Strawberry Milk

This post is sponsored by got milk? in partnership with local California organizations that educate kids about the importance of proper nutrition and healthy lifestyle.

One of my biggest cravings that I had during my pregnancy was milk. I craved large bowls of cereal in the mornings, a warm glass of milk before I went to bed, and the occasional glass of milk with my dinner, too. It's funny to say that I loved milk because I was lactose intolerant. But I guess the body and the more importantly the growing baby tells you what it wants and what it needs.
From what I remember from my childhood eating habits, milk was always a constant. It was always something that I remember my mom telling me to drink so I would have strong bones and grow big. As I grew older, I had consumed less milk than my childhood days and I had started drinking soy, or almond milk as an alternative. It's not the same as real milk, but I didn't see the value of milk as I do now. As a new parent, I want to teach the importance of a healthy diet to my own daughter so she can have strong bones and grow big, too.

Did you know that imitation milk has up to 12 ingredients, and real milk has 2? During my pregnancy, I grew to love milk again and stepped away from the imitation milk. I'm very happy to partner up with the California Milk Processor Board - the creator of the Got Milk campaign. They are working with THINK together to help educate children on the pure, simple and wholesome food choices for a healthy lifestyle. This is a great way to teach children to be healthy, avoid the imitation milk, and promote healthy choices.

I wanted to feature milk with something that is pure and healthy and nothing too fancy. As a new parent, I'm always looking for healthy recipes that I can make quick and fast. This was a no-brainer because I absolutely loved strawberry milk as a child, and you probably remember "it" as the special pink stuff that changes the color of your milk. I simply took some fresh strawberries that I got from the farmers market and pureed them and combined it with a simple syrup. Thus, making my own version of fresh strawberry syrup which allowed myself to enjoy a childhood favorite via the healthy route.

Fresh, fast and refreshing!

Peach Lemonade

Summer vacations. Sunny days. Warm nights. Sleeping in. Root beer floats. BBQ anything. Baseball games. Flip flops. This is pretty much why I love summer. Plus, I love this summer even more so since I'm on my maternity leave.

One of the biggest cravings that I had during my pregnancy was lemonade. I had drank water by the gallons and there's so much water that a pregnant gal can enjoy without wanting something else. Lemonade had become my best friend and was my go-to indulgent refreshment since my other vices were on the do-not drink list.

During the summertime, I love making batches of strawberry lemonade, Mexican Limeade, lemonade and the occasional Tinto de verano. I'm always finding ways to use up my Meyer lemons with all the 'ades. You can say that we love all things fruity and refreshing, which is why I had to make a batch of this peach lemonade. This is easy to prepare and great for entertaining - you might want to double up the batch so you have plenty to share.

Peaches are in season right now and this is a fabulous way to enjoy the summer's nectar in a glass.

Blackberry Lemonade

It's been a whirlwind of a week, and there has been a bit of a family emergency that has kept me away. Eric's grandmother is currently in the hospital and had a bit of a dizzy spell because she's anemic. The doctors are doing lots of tests to make sure she is okay, but had to undergo a colonoscopy because they were worried about the traces of blood they had found. We are anxiously waiting on the lab results of her latest CT scan and praying for a quick recovery. She is in good spirits and the family is doing everything we can to be there for her.

This was a simple drink that I had made earlier in the week because the abundance of Meyer lemons that I had picked off our tree. Usually when we have lemons - I make lots of lemonade. Lemonade has been one of my go-to drinks since the beginning of my pregnancy, but sometimes I have been a little bored of the repetitiveness of it. This was a refreshing variation by simply adding some muddled blackberries, and they are inexpensive at most grocery stores and farmers markets. I love the gorgeous purple hue that blackberries gave and if you didn't know purple is my favorite color!

It's perfect for entertaining and you can add a little shot of liqueur (rum/vodka/tequila) to make a nice adult version of the drink.

Ingredients:
6 to 8 lemons (2 cups of lemon juice), plus lemon slices
2 cups water
1 to 2 cups ice
1 cup simple syrup
1 pint of blackberries

Preparation:

Prepare the simple syrup by bringing one cup of sugar and water to boil, stirring until dissolved. Let cool.

In a large pitcher, muddle the blackberries, make sure to smash them completely or it will be hard to sip the fruit through a straw. Stir in the 2 cup of lemon juice, and 2 cups water. Add the ice and lemon slices. Serve in a glass with extra lemon slices if desired.

Yield: 2 Liter pitcher ~ about 6 cups
Review: Refreshing and a gorgeous way to brighten your day. Here's a sweet picture (instragram) of my favorite birthday cousin/twin, and my grandma. They are modeling the flower headbands that I had made while we were in the hospital yesterday. My grandma loved it, and had felt like a little kid. Doesn't she look darling in it? ;-)

Homemade Hot Chocolate Mix

Hot chocolate is one of those childhood drinks that my husband and I absolutely love and adore. In fact, one of my husband's favorite breakfasts while growing up is a large cup of hot chocolate with plenty of Cuban bread and butter. Eric would dip his bread into his hot chocolate, and let the bread soak with the hot chocolate and munch happily away. It's almost like a dessert-ish kind of breakfast and he swears up and down that chocolate is not his favorite flavor either, but in hot chocolate form...he's all over it. Between you and me, I think he has a super sweet chocolate spot and refuses to admit it.

Eric's go-to hot chocolate mix is Nesquik, and his super sweet tooth adds a couple extra spoonfuls of sugar to the mix. I always laugh at the amount of sugar that he adds to his cup of hot chocolate, and secretly hoped he would not add more sugar to my homemade batch of hot cocoa. Homemade hot cocoa is easy to prepare and pairs perfectly with homemade peppermint marshmallows.

Luckily I still had some bars of Ghirardelli chocolate that I received from the FB Tastemaker program. I wanted to make a salted caramel hot chocolate mix using the Sea Salt Soiree but I didn't have enough bars of chocolate to make that batch. I'll have to make that on my next round of homemade hot chocolate, but you might be able to enjoy that sweet tip.

Make a batch for your homemade Christmas baskets and share with everyone you know. Or indulge in your secret chocolate addiction like my husband.

Printable Recipe
Ingredients:
24 ounces high-quality semi-sweet chocolate, coarsely chopped
9 ounces dark chocolate, like 65% or higher grade, coarsely chopped
2 cups Dutch process cocoa
2 vanilla beans
4 cups granulated sugar

Preparation:

On a cutting board, carefully split and scrape the vanilla beans from the pods. Place in a large container with the sugar. Using your fingers work the seeds into the sugar, it's like massaging the vanilla beans into the sugar. Place the pods at the very bottom of the container. Cover and let stand overnight at room temperature.

In a food processor fitted with the metal blade, process semi-sweet and dark chocolate until finely ground, using 4-second pulses. The noise may scare you, but process in batches if necessary. (I kept my hand on the top of the processor because it shook so much.)

Remove vanilla pods from sugar. Add the ground chocolate and cocoa powder to sugar and whisk to blend, making sure to combine well.

Store mix airtight at room temperature for up to six months. Or divide up in small 4 ounce jars or small cellophane bags.

To serve, heat 2 tablespoons of mix with 8 ounces of warmed milk. (Make sure milk is really hot so the chocolate can melt).

Yield: About 4.75 cups of hot chocolate mix

Review: Chocolate heaven in a cup. It's rich and decadent and a great homemade gift to share with your family and friends. Make sure to make the homemade peppermint marshmallows, too.

Spicy Godiva Mocha Shake

Hey, did you know that my milkshake brings all the boys to the yard and their like - it's better than yours! (snap snap) Damn right… it's better than yours! I can teach you, but I have to charge….(snap snap)

La la-la la la. (shake shake)

I absolutely love that song from Kelis “Milkshake,” and I think it’s the perfect way to start this awesome weekend. My weekend rituals consist of: blaring my car stereo to the max, windows rolled down, singing songs that are too darn catchy, and making delicious milkshakes for no reason at all. That’s what Fridays are for - singing, having fun and drinking milkshakes.

I had to make one more Godiva coffee inspired post because this was one of my favorite coffee concoctions that I used to make all the time at my old stomping grounds, Diedrich Coffee. Whenever a customer would order this sweet drink, I would always make sure to make a little extra for myself. A drink for the customer, and a little teaser for myself. This is a spin on my Spicy Godiva Iced Mocha paired with coffee ice cream - you can easily substitute vanilla ice cream if you don’t have homemade coffee ice cream like myself.

Cool yourself away with this sweet and spicy mocha milkshake.

Preparation:

Add the ingredients in a blender, 1 heaping tablespoon of the spicy mocha mix, espresso, milk and coffee ice cream and blend until smooth, about 1 minute.

Pour into a large glass and add desired toppings. Top with desired toppings - whipped cream, grated chocolate, cocoa nibs and a dash of the spices.

Serve immediately with a pretty straw and sip away to your milkshake’s delight and fight away the boys in yard.

Spicy Godiva Iced Mocha

Being a part of Foodbuzz’s Tastemaker Program presents itself some sweet opportunities to indulge in some of my favorite things…this being coffee – you know my best friend. Foodbuzz partnered up with Godiva Coffee and had sent me two packages of their premium flavored coffees- Chocolate Truffle and French Vanilla. Yum and yum indeed. My cooking agenda was to sample and create an iced cold blended coffee recipe. YIPEE. This was definitely up my cooking repertoire being an ex-barista.

Typically, Eric and I drink regularly brewed coffee and sometimes on the weekends we will indulge on the occasional lattes or mochas. We sometimes fancy it up and enjoy “Cuban cafecitos” using our stovetop espresso coffee maker.  I can’t imagine a day without coffee because it’s my needed pick-me up and it’s the only way to start my day. However, it would be nice to have other coffee options when the weather is still unbearably hot and I knew that an iced coffee drink would hit the spot.

This drink was inspired from my many days of working at Diedrich Coffee, and sadly they went out of business, too. Whenever Eric used to visit me at work, he would request a hot Mayan mocha. It was his favorite coffee concoction because he loved how it was similar to hot chocolate but kicked up a spicy notch. My version is made with a sweet chocolate powder and spices combined with Godiva Chocolate Truffle coffee and milk. I knew that this would be a nice throwback to my golden barista days, and bring sweet college memories to my husband.

The ultimate chocolate mocha with a little bit of kick.

Strawberry-Banana Smoothies

95 degrees days are not pleasant at all. My poor flowers and plants are wilting from the heat, and my spring garden is not so “spring-y” either. This hot heat wave weather has been a bit tiresome and I’m protesting for it to go away already. I’m stuck working in the office all day long and come out to sauna-like weather. Don’t get me wrong I love the hot summer days but only when I’m out at the beach and relaxing the day away.

Sometimes if you can’t make a trip to the beach, bring the beach to you. This smoothie was easy to prepare and add whatever fruit you have on hand. I always have ripe bananas itching to be used, and fresh strawberries which are now in season and on the cheap. I used the leftover jackfruit that I had from batch of Turron that I had made, but you can substitute pineapples, too. I like the tartness of a jackfruit that it brings to the smoothie. One sip is like a tropical getaway to that remote island that you been daydreaming about…well that’s what I think about.

It’s drink-o for Cinco today, right? Well, here’s to the designated drinkers and non-alcoholic drinkers out there! Put your drinks up!

Strawberry-Pineapple Smoothie

Ingredients:
1 cup fresh strawberries, halved
1 cup pineapple juice
¼ cup almond milk (or milk of your choice)
½ cup vanilla ice cream
¼ jackfruit or pineapple chunks
½ to 1 cup ice
1 banana
1 teaspoon flax seeds

Preparation:

Combine all ingredients in blender or food processor and puree until completely smooth. Add more ice, if needed.

Serve immediately.

Yield: 2 ½ cups

Review: A refreshing summer drink, and an instant cool-down from this hot weather. If you haven’t had flax seed before, try adding a little bit to your baked goods or even oatmeal. It adds a little bit of nutty flavor and it’s totally healthy fiber-irffic for you, too.

Strawberry Lemonade

With the wonderful and delightful hotter days coming around again, there’s nothing refreshing as a large glass of lemonade. This past weekend, I did some hard duty pruning and removed several lemons from my Meyer lemon tree. Spring has sprung forward and I would hate to see the beautiful citruses go to waste. Naturally when you pick lemons from my tree, you make lemonade! This is a wonderful twist on a traditional lemonade sweetened with beautiful strawberries.

However, I wanted to change it up and make a copycat recipe from one of our favorite burger joints, Red Robin. They serve a fantastic freckled lemonade and it always quenches my sweet thirst for lemonade and strawberries. Simple and delicious drinks make me absolutely happy, and it’s a beautiful drink to sip away, too. This refreshment would be perfect on hot summer days, brunch with family, or a fun cocktail with a little extra liquor. Of course, you can make a variation on this recipe using different kinds of fruit. Mixed berries (blackberries, blueberries and raspberries), or even blueberry lemonade would make for some delicious concoctions, too.

Mmmmm, make a large pitcher for yourself a.s.a.p.!

Strawberry Freckled Lemonade

Preparation:

Prepare the simple syrup. In a small saucepan, add the 2 cups of sugar and 2 cups of water. Heat over medium-low heat until the sugar is fully dissolved.

In a medium bowl, add the frozen strawberries and 2 tablespoons of sugar. Muddle the strawberries with the back of a wooden spoon (or muddler) until slightly mushy.

Aqua Fresca Veraniega

I recently attended a Rick Bayless cooking demo, and enjoyed some delicious new treats from his latest cookbook. One of the first dishes that we enjoyed was Rick's favorite summer soft drink: Aqua Fresca Veraniega. Aqua Fresca Veraniega is Spanish for "fresh (cold) summer water," and is a mixure of cucumbers and pineapples. Most aqua frescas are usually a combination of blended fruits, seeds or cereal with an mixture of water and sugar. The most popular commonly known aqua frescas are tamarindo (made with tamarind), jamaica (made with hibiscus), and horchata (made with rice and cinnamon).

The key to making a wonderful aqua fresca is to infuse the water with the simple fruits. It's quite simple, and do not go overboard by making it like a fancy fruit smoothie. This is a great summer drink to cool down with and it is versatile enough to be used with an assortment of fruits. Watermelon, strawberries, papaya, mango, and oranges would be an tasty mixture to sample out. It's easy to prepare and quite refreshing, and if you're feeling a little indulgent. You can add a shot of tequila to perk it up for those hot summer days. Enjoy!!

Don't forget to enter my Rick Bayless cookbook giveaway, it's an autographed copy. Be sure to enter here!

Aqua Fresca Veraniega
Adapted from Fiesta at Rick's
Ingredients:
4 cucumbers, peeled, and roughly chopped - about 4 cups
1 medium pineapple, peeled, cored and cubed - about 4 cups
½ cup, flat leaf parsley, roughly chopped
½ cup, fresh cilantro leaves, roughly chopped
1/3 cup fresh lime juice, plus more if needed
1/4 cup sugar, plus more if needed
Ice cubes
Water

Preparation:

In a blender, combine all the ingredients with 1 ½ cups water. If it does not all fit, blend in batches. Blend until completely smooth.

Pour into a large 64 ounce pitcher, and stir in 6 additional cups of water. Taste and add more lime or sugar if needed. Serve in tall glasses over ice.

**Add 1 to 2 shots of tequila for the adult version.**

Review: A great summer soft drink without the fizz and bubbly. My girlfriend, Monica, and I really enjoyed the adult version because it wasn't too strong plus you could barely taste the tequila. You could probably add a rum or vodka if you're not a tequila fan. Most importantly, aqua fresca veraniega is quite refreshing by itself and the best way to quench your thirst!

Tinto de Verano

One of my favorite drinks of choice is wine. Not that I'm a wine snob or anything, but I'll tell you that I absolutely love Napa Valley and everything about wine. Eric and I take at least one trip a year to visit our fave Napa wineries and get a nice stash of wine for the year. There is something about wine that is savory and sensual and it brings a greater depth of whatever meal you are enjoying. It's quite the indulgent drink and completes any meal - it can intensify a Filet Au Poivre or sooth that little bit of chocolate with Port. I love how wine can take on so many flavors.

However, during the summer months when all you want to do is cool down and have something cold to drink, a Tinto de Verano can do the trick. I know some of you might argue about drinking wine in the summer, but this is one drink I highly enjoy during these hot summer days. Tinto de Verano simply translates to "Summer Wine" and a very popular drink from Spain. It's similar to sangria but without all the fruit and a little bit less alcohol. It's really easy to make and a very inexpensive way to turn a cheap bottle of wine to something very refreshing with a little bit of soda. Try it out for yourself and sip away.
Tinto de Verano
Original Krystal Recipe
Ingredients:
1 bottle of your fave cheap red wine ($2 buck chuck from TJs or Red Table Wine)
1 liter of Squirt
Ice

Preparation:

In your glass of choice, fill it with ice. Add equal parts of red wine and squirt. Mix with a straw and drink!

If you like less wine or less squirt - then make it to your liking. Refill your glass as needed. ;-)
Review:  Definitely a taste of summer, and a very thrifty drink. I'll be drinking Tinto de Verano into the end of summer. Salud!

Limonada (Mexican Limeade)

Wow, I can't believe I haven't blogged about anything in a week, but it's because we've been busy with our recent renovation project for our backyard. We had an enclosed sun room, and after two years of living here - we finally took it out! It was poorly installed, and it took Eric 15 minutes to take the entire thing out. He unscrewed the nails, and then proceeded to kick the walls down like crazy. We cleaned up the mess, painted the exterior of the house, and we are finally enjoying our backyard patio. It's so nice to sit on the back porch with the nice summer breeze, and we've been sipping on some Limonada. It's quite refreshing and very easy to make. Enjoy!
Limonada (Mexican Limeade)
Adapted from Foodnetwork
Ingredients:
12 limes or so- you'll need 1 cup of fresh squeezed lime juice
Simple syrup - 1 ½ cups of water & 1 ½ cups of sugar
Juice of one lemon
Water

Preparation:
1. Prepare the simple syrup. Combine the sugar and water in a saucepan, and heat until it barely begins to boil. Remove from heat and cool.
2. Combine 2 cups of syrup and one cup of lime juice, lemon juice and three cups of water in a pitcher. Add the lime wedges into the pitcher. Taste accordingly, add more water if needed. Serve over ice.

Review: Perfect with any meal and even better on a hot summer day.

Sunset Sangria

I love wine because it's a perfect accompaniment to a great steak or nice pasta meal, but sometimes drinking wine in the hotter months of Spring and Summer is not enjoyable. Usually, Eric will start drinking his hoppy beers, IPAs, and whatever is on sale from our farmers market. I'm not a particular fan of his beer selections, but wine is my drink of choice if you ask me. When it's nice and hot you want a drink that's light and fresh, a glass of wine won't do. But something like a Tinto de verano - equal parts of cheap red wine like $2 chuck with club soda - is a great summer refreshment. However, sangria is the BEST refreshment -  using cheap red wine and whatever fruit in season. Enjoying a glass of sangria is like that jungle juice you used to drink in college, you just keep drinking it without realizing how much alcohol has taken in effect. This is one of our go-to recipes for Sangria, and always seems to go fast at parties. Make one batch or two for a splendid time!

Sunset Sangria
Adapted from Rachael Ray
Ingredients:
3 tablespoons sugar
3 tablespoons (3 splashes) spiced dark rum
3 tablespoons orange liqueur
2 navel orange, sliced
1 lemon, sliced
2 ripe peaches, cut into thin wedges
2 ripe plums, cut into thin wedges
2 ripe nectarines, cut into thin wedges
2 cinnamon sticks
1.5 L bottle of Chianti *This is the best one to use, it's the cheapest, and truly accentuates the Sangria!
Squirt soda for topping off glasses of sangria at the table

Preparation:
1. Combine sugar, rum, orange liqueur, fruits, and cinnamon sticks in a large pitcher. Cover with bottle of wine and chill sangria several hours, preferably 24 hours. (This will make for the best sangria if the flavors meld together overnight.)

2. To serve, spoon fruits into glasses or goblets and pour over spiced wine. Top glasses of sangria off with a splash of Squirt. Make sure to eat some of the drunken fruit, it's perfect.

Review: Mmmmm, I love this Sangria because it's so refreshing and light. If you eat the drunken fruit, you'll get a little tipsy as well - or maybe that's just me. Either way, eat the fruit and drink the sangria. This is perfect for entertaining large groups, make a batch in your beverage container and serve it up in pretty cups. Your guests will be thirsty for more. Cheers!
